
This strawberry cake recipe is so easy! However, it tastes like it is a bakery cake. I have made it famous among my family and friends. Everyone asks me to make this cake!

Even though the cake tastes like a bakery cake, anyone can make it. It’s that simple! First, gather your ingredients. You will need a white cake mix, strawberry jello, eggs, frozen sweetened strawberries (thawed), vegetable oil, and salt for the cake.
For the strawberries, you want to buy the ones that are frozen in sugar so they will have a natural syrup. They usually come in a tub not a bag. They also have some frozen in Splenda. You may want to try that and the sugar-free Jello if you want to reduce the sugar. Make sure you give your strawberries time to thaw before you start to make your cake.
Preparation to make a strawberry cake
Preheat your oven to 350 degrees. Next, prepare 3 8 inch cake pans. I suggest that you invest in some good cake pans that will last you for years. They are more expensive, but they will also save you a lot of headaches from your cake sticking. Some people just spray their cake pans, which is fine, but I like to have more insurance that my cake won’t stick to the pan. I rub butter all over the inside of my pans–bottom and sides. Then, I put flour in the pan. Shake it around the bottom of the pan and then hold the pan vertically and let the flour “run” around the sides.
The next step is optional and to be honest, I thought it was crazy. I purchased some cake leveling strips. You get them very wet and then wrap them around the pan and pin them. Your cakes will come out level, and it will make it much easier to frost the cake. I’m not sure how they work, but they do!
Making the strawberry cake
In a large bowl, mix together your white cake mix and strawberry jello. To that, you will add four eggs, 1 cup of the thawed strawberries with the juice, 1 cup vegetable oil, and 1/4 teaspoon of salt. Mix with an electric mixer on low for about a minute and then mix on medium for two minutes. Try to get all the white cake mix mixed in as best you can so you won’t see little white pieces in your cake.
Pour your batter evenly into the 3 prepared pans. Shake the cake pans to spread the mixture, then raise the cake pans about 2 inches off the counter and drop them. That will release any bubbles in the cake. Put in the preheated oven. Bake for 25-30 minutes until a toothpick comes out clean. Put the cakes on a cake rack to cool completely.
The best strawberry frosting
Again, you will need to gather your ingredients–butter, cream cheese, sweetened frozen strawberries (thawed), and confectioner’s sugar. Your butter and cream cheese will need to be at room temperature and you should have enough strawberries leftover from your cake batter.

In a large bowl, cream together 6 tablespoons of butter and 6 ounces of cream cheese. Next, you will need 1/2 cup strawberries. I take a spoon to try to get only the strawberries first and then once I have all the strawberries if I don’t have 1/2 cup, I add some of the syrup to equal the 1/2 cup. Add the strawberries to the bowl and mix with the cream cheese and butter. Next, slowly add in 5 cups of confectioner’s sugar. The frosting should be a spreadable consistency. If it is too runny, add in more confectioner’s sugar.
Frosting the strawberry cake
The recipe makes plenty of icing so I put some on the plate and spread it out to hold the bottom layer in place. Next, I lay my first cake layer on the plate and frost the top of the layer. Then, add the second layer and repeat. Finally, add the third layer and frost the top. I also put frosting on the edges of the top layer and rake it to the sides and go around the cake making sure that I have frosted the cake all the way around.
Once finished frosting, the cake should be stored in the refrigerator. I actually like to freeze my completed cake and take it out on the day that I am going to serve it. To me, it makes it moister. Also, if you have any frosting left over, you can freeze that as well. It is wonderful to have if you make cupcakes.

- Pour batter evenly into the 3 prepared cake pans evenly.
- Shake the pans and then drop them on the counter to remove bubbles.
- Bake at 350 degrees for 25-30 minutes until a toothpick comes out clean.
- Cool on baking racks.
