If you’ve ever pulled a beautiful meringue-topped pie out of the oven only to watch it slowly deflate or weep on you an hour later, you already know how frustrating meringue can be. This video is all about avoiding those common mishaps so you can get bakery-style results in your own kitchen.

Meringue has a reputation for being finicky, but a lot of that comes down to just a few key details — the temperature of your eggs, how you add your sugar, and knowing exactly when to stop whipping. Once you understand those pieces, tall, glossy, stable meringue becomes a lot more achievable than people expect.

In this video, I walk through the whole process step by step, sharing the techniques I rely on to get that tall, fluffy peak that actually holds its shape once it’s out of the oven, instead of shrinking away from the edges of the crust or beading up with those little droplets of moisture.
