This oatmeal cake was one of my mom’s go-to desserts, and it’s easy to see why — it’s moist, comforting, and topped with a rich boiled caramel pecan icing that takes it from simple to special. It’s the kind of cake that disappears fast at a family gathering.

The icing is really the star here. Boiling it on the stovetop gives it that deep caramel flavor and just the right texture to spread over the warm cake.
